German Potato Salad Recipe
This classic German potato salad is made with the addition of diced bacon and a tangy sauce. Feel free to omit the bacon and use a little more vegetable oil in the dressing for this potato salad.

Total Time: 40 minutes
Ingredients:
- 6 slices bacon, diced and cooked until almost crisp, 2 tablespoons drippings reserved
- 2 pounds red potatoes, scrubbed, unpeeled, cut in 1-inch chunks
- 3 tablespoons vegetable oil
- 1 large onion, halved, thinly sliced
- 1 tablespoon all-purpose flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup water
- 1/4 cup cider vinegar
- 1/4 cup chopped fresh parsley
Instructions:
Put potatoes in a large saucepan, cover with water and bring to a boil. Cover, reduce heat, and continue cooking until potatoes are tender but still firm, about 15 to 20 minutes.
In a large skillet, heat the 2 tablespoons of bacon drippings and vegetable oil over medium heat. Add the sliced onion and saute until tender and lightly browned, about 4 to 6 minutes. Stir in the flour, sugar, salt, and pepper. Cook, stirring, for 1 minute. Add the water and continue cooking for 3 minutes. Add the vinegar and parsley and cook for 1 minute longer. Taste and add salt and pepper as needed.
Pour the onion dressing mixture over the potatoes and add the bacon. Gently stir to combine. Serves 4 to 6.
