Ingredients:
- 1 box (12 ounces) vanilla wafers
- 6 firm but ripe bananas, sliced
- 1 cup granulated sugar, divided
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 large eggs, separated
- 1 teaspoon vanilla extract
Instructions:
In a 9- x 13-inch baking dish, arrange a layer of half of the vanilla wafers. Top with half of the sliced bananas.
In a medium saucepan, mix 3/4 cup of the sugar with the flour and salt. Whisk in the milk and egg yolks. Cook over medium low heat, stirring constantly, until thickened. Do not boil. Stir in vanilla. Spoon half of the pudding mixture over the bananas. Repeat layers with the remaining vanilla wafers and banana slices and pudding.
Heat oven to 350°.
In a bowl, beat the egg whites until soft peaks form. Beat in the remaining sugar and continue beating until the whites are stiff. Spread the meringue over the pudding layer and bake for 12 to 16 minutes, until the meringue is browned.
