Mississippi Fried Oysters
These basic fried oysters are delicious with tartar sauce, remoulade, or a cocktail sauce. Enjoy with fries or use to fill a po' boy.

Ingredients:
- raw oysters
- 2 eggs, beaten
- 2 cups cornmeal
- 1 teaspoon sugar
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 tablespoons flour
Instructions:
Drain oysters and soak in the beaten eggs. Mix cornmeal, sugar, salt, pepper
and flour. Dip oysters in cornmeal mixture and fry in deep shortening (heated to about 370°)
until golden brown. Drain on paper towels.
