Spinach and Artichoke Casserole

This spinach casserole gets a little extra flavor from marinated artichokes.

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 60 minutes

Ingredients:

  • 2 boxes frozen spinach
  • 2 tablespoons butter
  • 16 ounces sliced mushrooms
  • 1 medium onion, chopped
  • 2 jars marinated artichoke hearts, drained
  • 5 eggs, slightly beaten
  • 1 clove garlic, crushed
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup Cheddar cheese, shredded
  • dash dried leaf thyme

    Instructions:

    Heat oven to 350° F. Grease a 2-quart casserole.

    Defrost and drain spinach, squeezing out excess moisture.

    Melt butter in a skillet over medium heat; saute mushrooms and onion until tender.

    Combine all ingredients until well mixed. Transfer to the prepared baking dish, cover tightly with foil, and bake for 30 to 40 minutes.

    Spinach Casserole Recipe serves 4.
