Mixed Braised Vegetables

A combination of fresh vegetables are braised with Asian style sauce and seasonings. Use a wok or large saute pan to cook the vegetables in this recipe.

Prep Time: 20 minutes
Cook Time: 7 minutes
Total Time: 27 minutes

Ingredients:

  • 2 tablespoons peanut oil
  • 1 teaspoon sesame oil
  • 1 large clove garlic, minced
  • 1 teaspoon fresh grated ginger root
  • 1 1/2 pounds sliced vegetables*
  • 1/2 cup vegetable broth or hot water
  • 1 tablespoon oyster sauce
  • 2 teaspoons soy sauce, low sodium
  • 1/2 teaspoon salt
  • 2 teaspoons cornstarch mixed with 1 tablespoon cold water

    Instructions:

    Heat oils in wok or large saute pan with garlic and ginger, add vegetables and fry, stirring, for 2 minutes. Add hot water or stock, sauces, and salt. Cover and simmer for 4 minutes. Push vegetables to side of wok, add cornstarch mixed with cold water, stir until thick. Toss vegetables in sauce and serve immediately with boiled rice.

    Serves 4.

    *Use a mixture of Chinese cabbage, leeks, cauliflower, green onions, Swiss chard, bok choy, in any combination or proportions.
