Cranberry Glazed Sweet Potatoes
Use cooked fresh or canned sweet potatoes in this baked sweet potato dish.
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Ingredients:
- 6 medium sweet potatoes, cooked and halved or canned sweet potatoes, drained
- 1 cup whole berry cranberry sauce
- 1/2 cup water
- 1/4 cup brown sugar, firmly packed
- 1/2 teaspoon finely grated orange zest
- 1 tablespoon butter
Instructions:
Arrange sweet potatoes in a shallow, buttered baking dish. Combine
cranberry sauce, water, brown sugar and orange peel in a saucepan;
mix
well, and bring to a boil. Cook gently for 5 minutes. Add butter and
pour
mixture over sweet potatoes.
Bake at 350° for 30 minutes,
basting
frequently.
Serves 6.
