Baked Corn Casserole
This corn casserole is a family favorite, made with cracker crumbs, cheese, and an egg.
Prep Time: 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 10 minutes
Ingredients:
- 1 can (15 ounces) creamed corn
- 1 can (12 to 16 ounces) whole kernel corn, drained
- 1 large onion, chopped
- 1 medium bell pepper, chopped
- 1/4 cup chopped red bell pepper or 1 jar (2 ounces)chopped pimientos, drained
- salt and pepper, to taste
- red pepper, to taste
- 2/3 cup milk
- 1 egg, beaten
- 1 cup cracker crumbs
- 1 cup shredded cheddar cheese
- 1/4 cup butter -- melted
Instructions:
Preheat oven to 350°.
Combine all ingredients in order given; mix until well blended. Pour into greased
2-quart ovenproof casserole.
Bake for 50 to 60 minutes.
Serves 6.
