Skillet Black Beans and Rice
Flavorful black beans and rice are quick and easy to prepare and cook. Serve this dish with sour cream or guacamole, along with chopped green onions for garnish.

Ingredients:
- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 cup water
- 1/2 cup thick and chunky salsa
- 1 large can (15 ounces) tomato sauce
- 1 1/2 cups uncooked instant white rice
- 1 cup whole kernel corn, frozen
- 1 cup chopped red bell pepper
- 1 can (15 ounces) black beans, rinsed and drained
Instructions:
In a large skillet over medium heat, brown ground beef in the olive oil; add
water, salsa, and sauce and mix well. Bring the mixture to a boil and

Reduce heat to low; cover and simmer for
about 10 minutes or until rice is cooked and vegetables are tender.
