Skillet Chicken With Tomatoes

Budget-friendly chicken thighs are browned then cooked with a simple mixture of bell peppers, onion, and tomatoes.

Prep Time: 12 minutes
Cook Time: 32 minutes
Total Time: 44 minutes

Ingredients:

  • 1 1/3 pounds boneless chicken thighs, skin removed
  • salt and pepper
  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • 1 cup onions, sliced
  • 1 green bell pepper, cut in strips
  • 1 red bell pepper, cut in strips
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • salt & pepper to taste

    Instructions:

    Wash chicken thighs and pat dry. Sprinkle with salt and pepper and flour. Heat oil in a large skillet and brown the thighs on all sides, about 6 to 8 minutes total. Add the remaining ingredients. Simmer, covered, about 25 minutes or until the chicken is tender. Uncover and continue to simmer until sauce is thick. Serve with hot cooked noodles or rice.
    Serves 4.
