Skillet Shrimp Gumbo
This easy gumbo-style shrimp and okra dish is great with rice. This skillet gumbo is made without the classic roux, but it's easy and flavorful, with fresh okra, shrimp, tomatoes, and seasonings.

Total Time: 55 minutes
Ingredients:
- 4 tablespoons olive oil
- 2 cups fresh sliced okra
- 1 pound medium shrimp, peeled and deveined
- 1/2 cup chopped green onions
- 3 cloves garlic, minced
- 1 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper
- 1 1/2 cups water
- 1 cup canned tomatoes
- 2 whole bay leaves
- 4 to 6 drops Tabasco sauce
- 2 cups hot cooked rice
Instructions:
Heat oil in a large skillet; add okra and cook for 10 minutes, stirring occasionally. Add shrimp, garlic, green onions, salt
and pepper; simmer for 5 minutes.
Add water, tomatoes, and bay leaves to the skillet; cover and simmer
for 20 minutes. Remove bay leaves; stir in Tabasco sauce.
To serve, place generous scoop of rice in each of 6 bowls. Spoon shrimp mixture
over the rice.
Serves 4 to 6.
