Tuna Melts


Tuna Melt Recipe

These delicious open faced tuna melt sandwiches are great for kids parties or a quick and easy family lunch. Top these tuna melts with American or Cheddar cheese and serve with soup or a salad.

Prep Time: 12 minutes

Cook Time: 6 minutes
Total Time: 18 minutes

Ingredients:

  • 4 English muffins, split
  • 1 can or pouch (6 to 7 ounces) water pack tuna, drained
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red or green bell pepper
  • 2 large eggs, hard-cooked and chopped
  • 1/4 to 1/2 cup mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 4 slices American or mild Cheddar cheese, cut in strips



Instructions:

Place the muffin halves, cut side up, on a foil-lined baking sheet.

Broil about 6 inches from heat for 2 to 3 minutes, or until toasted.

In a bowl, combine the tuna, onions, bell pepper, egg, mayonnaise, and mustard. Spread the tuna mixture over the English muffin halves and top with the cheese srips, criss-cross fashion.

Broil about 6 inches from heat for about 3 minutes, or until cheese is melted.

Serves 4
