Pasta Salad

Pasta Salad Recipe

Mayonnaise makes this a creamy, delicious pasta salad. I used rotini in this salad, but macaroni, fusili, or other small pasta shapes could be used as well.

Prep Time: 20 minutes

Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients:

  • 8 ounces rotini pasta or similar small pasta shapes, about 4 cups cooked pasta
  • 4 large hard-cooked eggs, chopped
  • 1/2 cup chopped celery
  • 1/3 cup chopped onion
  • 1/3 cup shredded carrot
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • 3/4 to 1 1/4 cups mayonnaise, or to taste
  • 1 teaspoon prepared mustard
  • salt and pepper, to taste

    Instructions:

    Combine pasta, eggs, celery, onion, carrot, vinegar, sugar, mustard, and 3/4 cup of mayonnaise. Add more mayonnaise, as needed, and add salt and pepper, to taste.

    Serves 6 to 8.
