Mashed Potatoes Recipe
These mashed potatoes are so easy to make, and they're delicious. This recipe makes enough mashed potatoes for 6 to 8 people. I always make plenty because they're also delicious fried or warmed for another meal, or you could use them as a topping on a cottage pie or meatloaf.

Total Time:
39 minutes
Ingredients:
- 2 1/2 to 3 pounds russet potatoes
- 6 tablespoons butter
- 1/3 to 2/3 cup light cream or milk
- 3/4 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
Instructions:
Put potatoes in a large saucepan and cover with water. Bring to a boil over medium heat. Reduce heat to low, cover, and simmer for about 20 minutes, or until fork tender.
Drain potatoes thoroughly. Put potatoes through a potato ricer for the smoothest results. Transfer drained potatoes (chunks or riced) to a bowl. With an electric mixer on low speed, beat in the butter and 1/3 cup of warm cream or milk. Add more cream or milk, as needed, then add salt and pepper, to taste.
