Garlic Mashed Potatoes

These delicious garlic mashed potatoes are perfect with any meal, from an everyday weeknight meal to a special holiday dinner. Use leftover mashed potatoes warmed or sauteed in butter, or use them to top a casserole or meatloaf.

Total Time: 35 minutes

Ingredients:

  • 2 1/2 pounds red skinned or Yukon gold potatoes
  • 1 stick (4 ounces) butter
  • 2/3 to 1 cup milk, warmed
  • 3 cloves garlic, mashed and finely minced
  • salt and pepper, to taste

    Instructions:

    Place the potatoes in a large saucepan and cover with water. Bring to a boil over medium heat and boil for about 20 minutes, until quite tender. Drain and mash well.

    Return the potatoes to the large saucepan over very low heat and stir in the butter. Add 2/3 cup milk or more, as needed. Add salt, to taste, and stir in the garlic.

    Serve hot.

    Serves 4 to 6.
