Easy Fish Chowder


Fish Chowder

A package of ready-to-prepare scalloped potatoes makes this fish chowder extra-easy to prepare and cook. For extra flavor, use clam juice or a good fish broth in place of the water. I love haddock in this chowder, but your favorite white fish will work just fine.

Prep Time: 15 minutes

Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients:

  • 5 slices bacon, diced
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 package scalloped potatoes, about 5 1/2 ounces
  • 4 cups milk
  • 1 1/2 cups water or clam juice
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon ground black pepper
  • 1 to 1 1/2 pounds fish fillets, such as haddock, cod, or sole



Instructions:

In a large saucepan, cook the diced bacon until just crisp. Remove to paper towels to drain; set aside.

In the bacon drippings left in the pan, saute the celery and onion until just tender. Add the scalloped potatoes with the included seasoning mix, the milk, the water or clam juice, parsley, and pepper. Stir to blend and bring to a boil over medium-high heat. Reduce heat to medium-low, cover, and simmer for 15 minutes.

Stir in the fish chunks and cook, stirring occasionally, for 10 minutes longer, or until fish flakes easily with a fork.

Ladle into bowls and garnish with the bacon.

Serves 6
