Harvard Beets Recipe
These Harvard beets are quick and easy to prepare with canned beets and a thickened sweet-sour sauce. Delicious and nutritious beets with a sweet and sour sauce.

Ingredients:
- 2/3 cup granulated sugar
- 2 teaspoons cornstarch
- 1/3 cup white vinegar
- 1/3 cup water
- 2 cans sliced beets, drained
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 3 tablespoons butter
Instructions:
In a medium saucepan, stir together the sugar and cornstarch. Whisk in the vinegar and water and cook, stirring, until thickened.
Add the beets and continue cooking, stirring frequently, for about 20 to 25 minutes, until nicely glazed. Add the butter, salt, and pepper and serve hot.
Serves 6.
