Easy Baked Beans With Bacon

These baked beans are great as a side dish for a big cookout or make them to take along to a potluck dinner. Bacon provides a wonderful, smoky flavor to these easy baked beans, and barbecue sauce makes them tangy and delicious.

Prep Time: 15 minutes
Cook Time: 2 hours
Total Time: 2 hours 15 minutes

Ingredients:

  • 8 slices bacon, cut in 1-inch pieces
  • 1 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 2 large cans (28 ounces each) baked beans, your favorite
  • 1/2 cup barbecue sauce
  • 1/3 cup packed light brown sugar
  • 3 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard



Instructions:

Heat oven to 325°. Grease a 2 1/2- to 3-quart baking dish.

Fry the bacon until done but not crisp. With a slotted spatula or spoon, remove to paper towels to drain. In the drippings, cook the onion and bell pepper until tender, 4 to 5 minutes. Add the beans and stir to blend. Continue cooking, stirring occasionally, for 5 minutes. Transfer to the prepared baking pan, top with the bacon pieces, and bake until bubbly and thickened, about 1 1/2 to 2 hours.
