Chicken Salad Rolls
This flavorful chicken salad is delicious in lettuce or spinach lined hot dog rolls. Grill or toast the hot dog rolls before filling, and serve the sandwiches with your choice of chips, fries, or a cup of soup.

- 1 1/2 cups diced chicken
- 1/2 cup diced celery
- 1/4 cup finely chopped onion
- 1/3 cup mayonnaise
- 1 tablespoon light sour cream
- 1 teaspoon spicy mustard
- 1 teaspoon lemon juice
- chopped parsley, optional
- spinach or lettuce leaves
- 4 split toasted hot dog rolls
In a medium bowl, combine the diced chicken, celery, and onion. In another bowl, combine mayonnaise, sour cream, mustard, lemon juice, and about 1 teaspoon of chopped parsley, or 1/2 teaspoon of dried parsley flakes. Stir well then stir into the chicken mixture.
Arrange spinach or lettuce leaves in the split buns and mound some chicken salad on each one.
Serve with a cup of soup, chips or fries, and sliced pickles or tomato.
