Caramel Pecan Pie

Caramel candies make this pecan pie extra special, and so delicious! Use your own favorite pie pastry recipe or use a frozen pie shell.

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 60 minutes

Ingredients:

  • 36 caramels, unwrapped
  • 1/4 cup water
  • 4 tablespoons butter
  • 3/4 cup granulated sugar
  • dash salt
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1 pie shell, 9 inch, unbaked



Instructions:

Preheat oven to 350° F.

In a saucepan over low heat, melt the caramels with the water, stirring frequently. Combine the sugar, salt, vanilla, and eggs. Gradually stir in the caramel sauce, blending well. Stir in the pecan halves.Pour the mixture into the pastry shell and bake for 45 minutes. The pie will look soft, but will become firmer as it cools.

Tip: Put a large piece of heavy duty foil under the pie to catch any drips.

Serves 8
