Cranberry Nut Muffins

This cranberry muffin recipe is easy to make, and feel free to use dried blueberries or raisins in place of the cranberries. Grated orange zest will add extra flavor to these muffins.
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 2 tablespoons sugar
  • 3/4 cup milk
  • 2 eggs, beaten
  • 4 tablespoons butter, melted
  • 3/4 cup dried cranberries
  • 1 teaspoon finely grated orange zest, optional
  • 1/2 cup chopped pecans or walnuts







Sift together the flour, salt, baking powder, and sugar. Combine milk, eggs, and melted butter; add to dry ingredients all at once. Blend just until dry ingredients are moistened. Fold in dried cranberries, orange zest, and nuts. Fill greased muffin cups 2/3 full. Bake at 425° for 25 minutes.

Makes 12 muffins.
