Coconut Chocolate Brownies
These chocolate coconut brownies are baked with a tasty coconut topping.
- 2/3 cup sifted all-purpose flour (sift before measuring)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup butter
- 2 ounces unsweetened chocolate
- 1 cup sugar
- 2 eggs, beaten
- 1 teaspoon vanilla
- 2/3 cups flaked coconut
Topping
- 2/3 cup flaked coconut
- 1 tablespoon sugar
- 2 tablespoons melted butter
Preheat oven to 350°. Grease and flour an 8-inch square pan.
Sift flour with baking powder and salt. Sift again. Melt butter and chocolate over hot water.
In mixing bowl with electric mixer, beat eggs. Beat in sugar until well blended. Blend in chocolate mixture. Stir in flour mixture until well blended then stir in vanilla and 2/3 cup of coconut. Spread in pan. For topping, combine the remaining 2/3 coconut with the 1 tablespoon sugar and 2 tablespoons melted butter; spread over batter. Bake for about 20 to 25 minutes, until done. Cool and cut into squares or bars.
