Caramel Crunch Ring
This would make a great party treat for Halloween or birthday parties.
- pecan halves
- 2 cups firmly packed brown sugar
- 3/4 cup butter
- 1/2 cup chopped pecans
- 8 cups crispy rice cereal
- several scoops of ice cream
- butterscotch dessert sauce
Generously butter a 1 1/2-quart ring mold; lay pecan halves around the bottom.
In a saucepan combine brown sugar and the butter over medium-low heat. Heat, stirring constantly, and boil for 2 minutes. Combine chopped pecans and cereal in a large buttered bowl. Pour the hot syrup over the cereal and pecan mixture. Pack mixture into the buttered ring mold. Chill thoroughly. To serve let the mold stand in warm water for 5 minutes. Invert on a serving plate and unmold. Fill center of the ring with ice cream scoops and drizzle with butterscotch sauce.
Serves 8 to 10.
