Fruitcake Bars

  • 2 eggs
  • 1 cup sifted confectioners' sugar
  • 3 tablespoons melted butter
  • 3/4 cup sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup chopped pecans or walnuts
  • 1 cup chopped dates
  • 1/2 cup mixed candied fruits
  • 1/4 cup chopped candied cherries







Beat eggs until foamy. Gradually beat in the sifted sugar. Stir in melted butter.

Sift together the flour, baking powder, and salt. Stir into the first mixture. Fold in the nuts and fruits. Spread the batter in a greased and floured 8-inch square pan. Bake at 275° for about 45 to 55 minutes. Cool and cut into bars.
