Banana Oatmeal Cookies
These banana oatmeal cookies are made with brown sugar and vanilla, with the addition of raisins.
Prep Time: 12 minutes Cook Time: 15 minutes
Total Time: 27 minutes
Ingredients:
- 3/4 cup shortening
- 1 cup light brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup mashed ripe banana, about 1 large ripe banana
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 cups regular rolled oats
- 1/2 cup raisins
Instructions:
In large mixing bowl, beat shortening, brown sugar, egg, mashed banana, and vanilla until creamy. Mix flour, salt, and baking soda. Add to creamed mixture; blend well. Stir in oats and raisins. Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 375° for 15 to 20 minutes. Makes about 5 dozen cookies
