Half Pound Cake

This easy pound cake is baked in a loaf pan. Frost with your favorite vanilla or cream cheese frosting or serve slices with lemon or fruit sauce.

Prep Time: 15 minutes
Cook Time: 1 hour 10 minutes
Total Time: 1 hour 25 minutes

Ingredients:

  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 5 egg yolks, well beaten
  • 2 tablespoons lemon juice
  • 5 egg whites, stiffly beaten
  • 2 1/4 cups cake flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon nutmeg



    Instructions:

    Cream shortening and butter with sugar; beat in lemon juice and egg yolks. Fold in egg whites.

    Sift together the flour, salt, baking powder and nutmeg; fold into first mixture. Grease a 9x5x3-inch loaf pan, line with waxed paper; grease bottom of paper lining. Pour in batter; bake pound cake at 375° for 65 to 75 minutes.
