Parslied New Potatoes
New potatoes are cooked and seasoned with butter and fresh chopped parsley. I like curly parsley, but use Italian flat-leaf parsley if you prefer.
Prep Time: 8 minutes
Cook Time: 20 minutes
Total Time: 28 minutes
Ingredients:
- 18 to 24 small new potatoes
- 3 tablespoons butter
- 2 tablespoons chopped parsley
Instructions:
New potato peels should be very thin, so there's no need to peel. Scrape or scrub as desired and to clean. Cook whole small new potatoes in boiling salted water until tender.
Drain and shake over heat to dry.
Add butter; toss then sprinkle with parsley.
Serves 4 to 6
