Austrian Style Chicken Simmered With Tomatoes and Sour Cream
In this recipe, chicken pieces are browned then cooked with vegetables and served with a sour cream sauce. It's a great chicken dish to make for any family meal.

Ingredients:
- 3 1/2 pounds chicken pieces
- flour
- 2 tablespoons butter
- 2 tablespoons oil
- 1 cup chopped onion
- 4 to 6 ounces sliced mushrooms
- 1 cup green pepper strips
- 1/2 cup thinly sliced celery
- 1 cup thinly sliced carrots
- 2 cans (14.5 ounces each) diced tomatoes
- 1 teaspoon salt
- 1 teaspoon paprika
- dash pepper
- 1/4 cup flour
- 3/4 cup sour cream
Instructions:
Coat chicken pieces with flour. Brown well in butter and oil in a large skillet. Add onion, green pepper, celery, carrots, and mushrooms. Cook for 2 minutes; add tomatoes, salt, paprika, and pepper. Cover and simmer for 1 hour, until chicken is tender. Remove chicken, reserving liquid; keep warm while making gravy. Skim excess fat off liquid in skillet. Combine 1/4 cup flour with the sour cream; whisk or beat until smooth. Stir into the liquid and cook over low heat 3 to 5 minutes, until heated through and smooth.
