Easy Potato Cakes with Bacon
Bacon and a little onion flavor these leftover mashed potato cakes.

Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:
- 2 cups leftover mashed potatoes
- 1/2 cup finely chopped onion
- 4 slices cooked bacon, diced
- 1 egg, beaten
- 1 teaspoon salt
- dash pepper
Instructions:
Add bacon and onions to mashed potatoes. Mix in the beaten egg, salt, and pepper. Shape into 6 patties. Melt butter in skillet over medium low heat; brown patties until cooked and browned on both sides.
