Bacon and Egg Scallop
This hard-cooked egg recipe is an old-fashioned casserole with cheese, bacon, and potato chips.
Prep Time: 12 minutes
Cook Time: 20 minutes
Total Time: 32 minutes
- 1/4 cup chopped onion
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups milk
- 1 cup shredded American cheese
- 6 hard-cooked eggs, sliced
- 1 1/2 cups crushed potato chips
- 8 to 10 slices bacon, cooked and crumbled
Instructions:
In a saucepan cook onion in the butter until tender; blend in flour. Gradually add milk, stirring. Continue cooking, stirring constantly, until mixture thickens. Add cheese and stir until cheese is melted.
Place a layer of egg slices in a 10x6x1 1/2-inch baking dish. Cover with half of the cheese sauce, half of the potato chips, and half of the bacon. Repeat layers. Bake at 350° 15 to 20 minutes, or until heated through. Serves 4 .
