Bacon and Egg Strata

  • 8 slices bread, crusts trimmed
  • 4 ounces bacon, cooked until crisp, drained
  • 1 to 2 tablespoons bacon grease or melted butter, optional
  • 4 eggs, slightly beaten
  • 3 cups milk, scalded
  • 1 tablespoon grated onion, or use 1 teaspoon dried minced onion
  • 3/4 teaspoon seasoned salt
  • 1/4 teaspoon pepper







Cut each slice of bread into 3 pieces; arrange in shallow, lightly buttered baking dish. Place bacon over bread. If desired, drizzle a little of the bacon grease or melted butter over the bread. Mix remaining ingredients and pour over the bacon and bread. Place the baking dish in a larger pan of hot water (about 1/2 inch). Bake at 350° for 45 minutes, or until somewhat firm.
Bacon and egg breakfast casserole serves 6.
