Banana Bran Muffins
These banana bran muffins are made with butter, brown sugar, mashed bananas, bran, and pecans.
Prep Time: 12 minutes
Cook Time: 23 minutes
Total Time: 35 minutes
- 1/2 cup soft butter
- 1/2 cup light brown sugar, firmly packed
- 3 ripe bananas, mashed
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup unprocessed bran flakes
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon soda
- 1 cup chopped pecans
Instructions:
In a large mixing bowl, cream butter and brown sugar until fluffy. Add bananas, milk, vanilla, and eggs; blend well. Stir in flour, bran, baking powder, salt, and soda. Stir in chopped pecans. Spoon banana muffin batter into greased or paper-lined muffin cups. Bake at 375° for 20 to 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cook 5 minutes; turn out onto racks to cool completely. Makes 1 dozen
