Cobbler Filling

  • 5 medium apples (Granny Smith, Jonathan, or another rather tart variety)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (or vanilla paste)
  • 1/4 cup water (or apple juice)
  • 1 tablespoon butter

Cobbler Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter (softened)
  • 1 large egg

Instructions

  1. Preheat the oven to 375 F. Butter a 9-inch baking dish.
  2. Peel and core the apples. Slice into wedges and then slice the wedges thinly.
  3. In a large bowl, combine the brown sugar and 1/2 cup of granulated sugar with 2 tablespoons of flour, the cinnamon, and 1/4 teaspoon of salt. Add 1 teaspoon of vanilla and 1/4 cup of water. Toss the apple slices into the bowl and stir to blend the ingredients. Turn the apple mixture into the prepared baking dish.
  4. In a mixing bowl, combine the 1/2 cup of flour with 1/2 cup of granulated sugar, baking powder, and 1/4 teaspoon of salt.
  5. In a separate bowl, beat the egg.
  6. Add the beaten egg to the flour mixture along with the softened butter. Beat the mixture until smooth.
  7. Spoon the batter evenly over the apple filling.
  8. Bake the cobbler for about 35 to 45 minutes, or until the apple filling is tender and the topping is golden brown.
