Blueberry Buckle

  • 1 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/3 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/2 cups fresh or frozen whole blueberries (thawed and drained if frozen)
Crumb Topping
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup soft butter
  • 1/2 teaspoon ground cinnamon







Mix together first 8 ingredients; spread in a lightly buttered 8-inch square baking dish. Sprinkle with blueberries. Mix topping ingredients; sprinkle over berries. Bake at 350° for 45 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
