Confetti Rice Skillet
This easy skillet rice is packed with vegetables, including sliced zucchini, green onions, corn, tomatoes, and herbs.

- vegetable cooking spray
- 1 1/2 pounds zucchini, thinly sliced
- 3/4 cup chopped green onions
- 1 can (12 ounces) whole kernel corn, drained
- 1 can (14.5 ounces) diced tomatoes, undrained
- 3 cups cooked long-grain rice
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried leaf oregano, crumbled
Instructions:
Coat a large skillet with cooking spray; heat over medium heat. Add zucchini and onions; cook, stirring, for about 5 minutes, or until crisp-tender. Stir in remaining ingredients; cover, reduce heat, and simmer for 15 minutes. Serves 10 to 12.
