This one egg banana bread recipe is a snap to prepare and bake. It’s made with one egg, melted butter, and 3 bananas. If you don’t like nuts in banana bread, leave them out or replace them with dried fruit or chocolate chips.

Recipe Tips

  • Use overripe bananas. The bananas should have lots of brown/black over the peel. If they are primarily yellow, you should leave them at room temperature for a few days—the length depends on their ripeness. If your bananas are ripe but lightly streaked with brown, add extra sugar and salt to compensate for the less-sweet bananas. Add 1 heaping tablespoon of sugar and 1/4 teaspoon of salt for this banana bread recipe.
  • Combining the dry ingredients separately ensures they will be evenly mixed into the wet batter. Avoid overmixing, or you could end up with a tough, dense bread.
  • Avoid overbaking. Test it with a skewer or toothpick—it should come out with a few moist crumbs, and no visible wet batter.
  • Let banana bread cool in the pan for 10 to 15 minutes before removing it to a rack to cool completely.
  • Store the bread in an airtight container to keep it moist, or freeze it.

  • 3 large ripe bananas (1 1/2 cups, mashed)
  • 1 large egg
  • 1 cup sugar, granulated or brown sugar
  • 4 ounces butter, melted and slightly cooled
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350 F.
  2. Grease and flour a 8 1/2-by-4 1/2-inch loaf pan
  3. In a mixing bowl with an electric mixer, combine the mashed bananas, sugar, egg, and melted butter.
  4. In a separate medium bowl, combine the flour, salt, and baking soda; whisk to blend.
  5. Stir the dry ingredients into the first mixture until just blended.
  6. Fold in chopped nuts, if using.
  7. Spoon the mixture into the prepared loaf pan; spread evenly.
  8. Bake for 53 to 58 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
