Buttermilk Pralines

Buttermilk gives these delicious pralines a pleasant tang.
Prep Time: 10 minutes
Cook Time: 15 to 20 minutes
Total Time: 25 minutes
2 1/2 cups granulated sugar
1 cup buttermilk
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons light corn syrup
3 tablespoons butter
1 teaspoon vanilla
1 cup pecan halves
Instructions:
Measure sugar and corn syrup into a large saucepan.
Stir baking soda and salt into the buttermilk; add to the sugar. Bring mixture to a boil over medium heat, stirring until sugar is dissolved.
Continue cooking to soft ball stage* (236 F).
Remove from heat and add butter and vanilla.
Beat until creamy. Stir in pecans and quickly drop from spoon onto wax paper.
*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten when picked up with fingers (234 F to 240 F).
