  1. 1 tablespoon vegetable oil
  2. 1 pound lean ground beef
  3. 1 10.5-ounce can condensed cream of mushroom soup
  4. 1 10.5-ounce can condensed cream of chicken soup
  5. 1 cup red enchilada sauce, mild or medium
  6. 1 cup milk
  7. 1 can (4 ounces) chopped green chile peppers
  8. 1 9.25-ounce bag Doritos (nacho flavored chips), crushed, divided
  9. Salt and pepper to taste
  10. 1 cup shredded Mexican blend cheese or Monterey Jack or Cheddar

Instructions

  1. Heat the oven to 350 F.
  2. Heat the oil in a skillet over medium-high heat. Add the ground beef and cook undisturbed for 4 minutes. Break the beef up and continue cooking and stirring until it is no longer pink. Drain and discard excess fat.
  3. Mix together browned ground beef, soups, enchilada sauce, milk, chile peppers, and about 3/4 of the crushed Doritos.
  4. Top with remaining crushed Doritos and shredded cheese.
  5. Bake for 25 to 30 minutes, until the casserole is hot and bubbling and the cheese is melted.
