Mexican Casserole
This is a simple but tasty casserole made with ground beef, soups, enchilada sauce, chile, Doritos and cheese. Feel free to add about 1/2 cup of chopped onion to the ground beef when you brown it.

Cook Time: 30 Minutes
Total Time: 42 minutes
- 1 pound lean ground beef, browned
- 1 can condensed cream of mushroom soup (10 3/4 ounces)
- 1 can condensed cream of chicken soup (10 3/4 ounces)
- 1 cup enchilada sauce, mild
- 1 cup milk
- 1 can (4 ounces) chopped green chile peppers
- 1 bag (medium) Doritos, crushed; save about 1/4 for topping
- salt and pepper to taste
- shredded Mexican blend cheese or Monterey Jack or Cheddar
Instructions:
Mix together browned ground beef, soups, enchilada sauce, milk, chile peppers, and about 3/4 of the crushed Doritos. Top with remaining crushed Doritos and shredded cheese. Bake at 350° for 25 to 30 minutes, until hot and cheese is melted.
