Gingerbread Men

  • 1 cup shortening
  • 1/2 cup brown sugar, firmly packed
  • 1 egg
  • 3 1/4 cups all-purpose flour, sift or stir before measuring
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup light molasses
  • 2 cups quick-cooking or old-fashioned rolled oats







In mixing bowl, cream shortening and sugar until light and smooth. Blend in egg. Sift together the flour, salt, soda, and spices; add to creamed mixture alternately with molasses. Stir in oats. Chill dough for 2 hours.

Roll out dough on lightly floured surface to about 1/8-inch thickness. Cut with floured cutters; place on ungreased cooking sheets. Bake at 275° for 8 to 10 minutes. Cool then decorate with powdered sugar frosting (use your favorite or the recipe below), raisins, and cinnamon candies.
Makes about 2 dozen gingerbread men.

Vanilla Icing or Glaze

  • 2 cups powdered sugar - sift before measuring
  • 1 1/2 tablespoons butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons milk
Combine all icing ingredients in small mixing bowl. Stir until smooth and well blended. Adjust for spreading consistency if necessary, adding more milk or more powdered sugar. Spread icing or drizzle on warm cookies or pound cake.
