Peanut Jelly Bars
These easy peanut jelly bars are made with butter, brown sugar, oats, peanuts, and your favorite jam or jelly.
Prep Time: 10 minutes
Cook Time: 25 Minutes
Total Time: 35 minutes
- 3/4 cup butter
- 1 cup light brown sugar, firmly packed
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 cups quick-cooking rolled oats
- 1/2 cup chopped peanuts
- 10 ounces (about 1 1/4 cups) jelly or jam
Instructions:
In a mixing bowl, cream butter and sugar until light and fluffy.
In another bowl, combine flour, salt, and soda; add to the creamed mixture, stirring until well blended. Stir in rolled oats and chopped peanuts. Press half of the crumb mixture into the bottom of a buttered 13x9x2-inch baking pan. Spread with jelly; sprinkle with remaining crumb mixture. Bake at 400° for 25 minutes. Cool and cut into bars.
