Cheesy Flounder Rolls

Flounder is coated with a Parmesan coating then baked with cheese. Serve this rolled up flounder with the included simple cheese sauce, or make a white sauce and sprinkle with Parmesan cheese.
Prep Time: 8 minutes
Cook Time: 20 to 25 Minutes
Total Time: 28 minutes

  • 4 pieces flounder fillets, about 1 pound
  • 1 egg, beaten
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons yellow corn meal
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 slices American cheese
  • 2 tablespoons melted butter
Quick and Easy Cheese Sauce
  • 1/2 cup milk
  • 3 slices American cheese



    Instructions:

    Pat fillets dry with paper towels then dip into beaten egg. In a shallow wide bowl, combine Parmesan cheese, flour, cornmeal, salt, and pepper. Dredge fillets in dry mixer to coat well. Place a slice of American cheese on each flounder fillet then roll up, securing with a toothpick. Place in a baking dish and drizzle with melted butter. Bake at 350° for about 20 minutes, or until fish flakes with a fork.

    If desired, serve with a quick and easy cheese sauce. Heat milk and American cheese over low heat, stirring frequently, until sauce is smooth.

    Serves 4.
