Cheesy Flounder Rolls
Flounder is coated with a Parmesan coating then baked with cheese. Serve this rolled up flounder with a simple cheese sauce.
- 4 pieces flounder fillets, about 1 pound
- 1 egg, beaten
- 1/3 cup grated Parmesan cheese
- 3 tablespoons yellow corn meal
- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices American cheese
- 2 tablespoons melted butter
Quick and Easy Cheese Sauce
- 1/2 cup milk
- 3 slices American cheese
Pat fillets dry with paper towels then dip into beaten egg. In a shallow wide bowl, combine Parmesan cheese, flour, cornmeal, salt, and pepper. Dredge fillets in dry mixer to coat well. Place a slice of American cheese on each flounder fillet then roll up, securing with a toothpick. Place in a baking dish and drizzle with melted butter. Bake at 350° for about 20 minutes, or until fish flakes with a fork.
If desired, serve with a quick and easy cheese sauce. Heat milk and American cheese over low heat, stirring frequently, until sauce is smooth.
