These cookies are super easy to prepare with Bisquick baking mix. With only 5 ingredients, they’re a snap to make with minimal mess. You don’t need a mixer, either. They come together quickly in a bowl with a spoon. Shaping and rolling the cookies in sugar could be a fun task to share with a friend or the kids.

It’s hard to tell when they’re done, so try to avoid overbaking them. They should be done in 7 to 9 minutes. You can score them with a fork for the traditional criss-cross marks or flatten them with the bottom of a glass dipped in sugar.

  • 1 cup smooth peanut butter
  • 1 14-ounce can sweetened condensed milk
  • 1 1/2 teaspoons vanilla extract
  • 1 3/4 cups (210 grams) Bisquick baking mix
  • Optional: 2/3 cup mini chocolate chips
  • 3 tablespoons granulated sugar, for rolling

Instructions

  1. Heat the oven to 375 F.
  2. Line baking sheets with parchment paper.
  3. In a mixing bowl with a wooden spoon, combine the peanut butter and sweetened condensed milk until smooth. Add the vanilla and stir to blend.
  4. Add the baking mix and blend thoroughly. The dough will be quite stiff.
  5. Use a cookie scoop to scoop up the dough and then roll them into small balls. Roll them in the sugar and place them on the prepared baking sheets leaving about 1 1/2 inches between the cookies. The spread very little
