Butterscotch Bars
The meringue topping makes this butterscotch bar recipe a little different from most.
- 1/4 cup butter
- 1 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 cup all-purpose flour, sift or stir before measuring
- 1/2 teaspoon salt
- 1 egg white
- 1 tablespoon white corn syrup
- 1/2 cup granulated sugar
- 1/2 cup chopped walnuts
Combine butter and brown sugar in a saucepan; cook and stir over low heat until mixture begins to bubble. Remove from heat and set aside to cool.
When mixture is cooled, combine mixture with 1 egg and the vanilla; beat well. Sift together flour and salt and add to the sugar mixture; stir to blend well.
Spread batter in a greased and floured 8-inch square baking pan. Beat egg white to soft peaks; add corn syrup and gradually add 1/2 cup of granulated sugar, beating to stiff peaks. Fold in chopped walnuts. Spread meringue mixture over batter. Bake at 350° for 25 to 30 minutes.
Cut into bars.
