Tex-Mex Chicken Salad

Avocado, salsa, sour cream, and sliced ripe olives give this tasty chicken salad its southwestern flavors. Enjoy this chicken salad as a luncheon dish or light supper. The recipe is easy to cut in half for a family of four.

- In a large bowl, combine the diced chicken , shredded cheese, diced tomato, avocado, and olives. Cover and chill for 20 minutes.
- Arrange lettuce evenly on 8 salad plates. Spoon the chilled chicken mixture over each serving.
- Top with a dollop of sour cream, salsa, and jalapeno rings, if using.
- Sprinkle with tortilla chips.
