Slow cooker beef brisket makes an excellent meal with mashed potatoes and your favorite vegetables, or serve the beef with coleslaw and baked beans.

This version includes a hearty homemade beer barbecue sauce with liquid smoke for smoked flavor.

For sandwiches, cook the brisket until it is tender enough to shred; serve it on toasted buns with coleslaw and pickles.

What To Do With Leftover Brisket

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Repurpose leftover brisket in sandwiches, on pizza, in mac and cheese, in soups and salads, or add it to baked beans.
  • To freeze leftover brisket, let it cool completely. Place it in airtight containers or freezer bags and label with the name and date. Freeze it for up to 3 months for best texture and flavor.

Ingredients

  • 1 large onion, quartered and sliced
  • 1 beef brisket, about 4 pounds, trimmed
  • 1/2 teaspoon ground black pepper
  • 3/4 cup beer
  • 1/2 cup ketchup
  • 2 tablespoons liquid smoke
  • 1 tablespoon light brown sugar, packed
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 3 tablespoons flour whisked into 2 to 3 tablespoons water

Instructions

  1. Put onions into the crockery insert of a slow cooker. Cut the brisket into 2 or 3 pieces and place it on the onions. Sprinkle with the pepper.
  2. Combine the beer, ketchup, liquid smoke, brown sugar, Worcestershire sauce, and garlic; pour over the meat. Cover and cook on high for 4 to 6 hours, or cook on low for 8 to 10 hours.
  3. Remove the beef to a serving platter.
  4. Add the flour-water mixture to the juices in the slow cooker. Cook, uncovered, on high for about 5 to 8 minutes or until thickened.
  5. Serve the brisket sliced with the thickened sauce.
