Slow Cooker Beef Stew

This simple beef stew is easy to prepare, and it cooks to perfection in the slow cooker. This recipe makes enough stew for 6, but can easily be doubled for a game day crowd or potluck. Feel free to add rutabagas to the carrots and potatoes, or add frozen peas about 30 minutes before the stew is done.

Cook Time: 8 hours
Total Time: 8 hours 15 minutes
- In a large skillet or stovetop safe slow cooker insert, brown the beef with onion in olive oil.
- Add the carrots and potatoes. Stir in the gravy mixes and then stir in the beef broth and pepper.
- Cover and cook on HIGH for 4 hours or on LOW for 8 to 9 hours.
