There’s little drama in baked potatoes, but they’re always a welcome side dish. For baking, choose long, nicely shaped russet or baking potatoes free from blemishes and cuts. Feel free to roll the oiled potatoes in coarse salt before baking. Baked potatoes are excellent with just about any main dish, especially grilled or pan-fried steaks and chops.

Ingredients

Scale
  • 2 pounds baking potatoes, peeled and thinly sliced, about 1/8-inch thickness

  • Kosher salt (optional)
  • 3 tablespoons butter (for serving)
  • Optional garnishes: sour cream, chopped fresh parsley, shredded cheese, crumbled cooked bacon

Instructions

  1. Scrub the potatoes and pat dry. Rub the potatoes with the olive oil and sprinkle with kosher salt, if desired. Prick the potatoes in several places with a sharp fork or skewer.
  2. Arrange the potatoes on the oven rack and bake for 1 hour to 1 hour and 15 minutes, or until the potatoes are fork-tender. Squeeze them or prick with a fork to test for doneness.
