White Bean & Smoked Turkey Casserole

This turkey casserole is made with canned great northern beans and smoked turkey, along with onion, garlic, and thyme.

Prep Time: 12 minutes
Cook Time: 20 minutes
Total Time: 32 minutes

Ingredients:

  • 2 cans (16 ounces each) Great Northern Beans, drained, 1 cup liquid reserved
  • 3 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 12 ounces smoked turkey, cut in thin strips
  • 1/3 cup dry white wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried leaf thyme
  • 1 bay leaf, broken in half
  • 1/2 teaspoon pepper

    Instructions:

    Heat oil in heavy 2-quart stovetop casserole or saucepan. Add onion and garlic and cook over medium heat until golden. Stir in turkey. Add wine and cook over high heat until it evaporates. Add remaining ingredients and liquid from beans. Stir gently to blend. Bring to boil, reduce heat to low, cover and simmer 20 minutes, adding a little water if mixture becomes dry, until hot and flavors have blended. Discard bay leaf.

    Serves 4.
