Bean Sprout, Egg and Chicken Patties

  • 1 1/2 cups mung bean sprouts
  • 6 large eggs
  • 1 cup cooked chicken -- shredded
  • 3/4 cup chopped green onions
  • 1 tablespoon soy sauce
  • 1/8 teaspoon black pepper
  • 4 tablespoons vegetable oil





Whisk eggs in a large bowl. Add bean sprouts, chicken, green onions, soy sauce and pepper; mix well. In 10-inch skillet heat 2 tablespoons of oil over medium-high heat. Drop 1/3 cup egg mixture for each patty into hot oil without crowding. Cook about 1 to 2 minutes on each side until browned, adding oil as needed. Serve with ginger soy sauce.
