Chicken and Egg Patties With Green Onions
These little chicken and egg patties have a distinctive Asian flavor.

Ingredients:
- 1 1/2 cups mung bean sprouts
- 6 large eggs
- 1 cup cooked chicken, shredded
- 3/4 cup chopped green onions
- 1 tablespoon soy sauce
- 1/8 teaspoon black pepper
- 4 tablespoons peanut oil
Instructions:
Whisk eggs in a large bowl. Add bean sprouts, chicken, green onions,
soy
sauce, and pepper; mix well. In a large skillet heat 2 tablespoons
of oil
over medium-high heat. Drop 1/3 cup egg mixture for each patty
into hot
oil without crowding. Cook about 1 to 2 minutes on each side until
browned, adding oil as needed. Serve with ginger soy sauce or your favorite dipping sauce.
