Ski Day Chicken Casserole With Sour Cream
This flavorful chicken casserole would also be great with leftover turkey. It's easy to put this casserole together and it can be made a day in advance.

Cook Time: 35 minutes
Total Time: 47 minutes
Ingredients:
- 8 tablespoons butter, divided
- 1/4 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup sour cream
- 1/8 teaspoon nutmeg
- 1/8 teaspoon pepper
- salt, to taste
- 1/4 cup dry sherry or dry white wine
- 1/2 pound broad egg noodles, cooked, drained
- 4 to 5 cups cooked chicken, cut up
- 1/2 pound mushrooms, sautéed, sliced
- 1 cup soft bread crumbs
- 1/2 cup fresh grated Parmesan cheese
Instructions:
Melt 4 tablespoons butter; stir in flour until smooth. Add broth, stirring until thick. Stir in the sour cream, nutmeg, pepper and salt; heat through. Remove
from heat and stir in sherry. Arrange noodles in 9x13 inch baking
dish. Cover with chicken, mushrooms, and sauce. Melt remaining
4 tablespoons butter and mix with crumbs. Top casserole with crumbs
and the cheese. Bake in a preheated 350° oven for 30 minutes or until
hot and bubbly and topping is browned. May be made a day in advance, refrigerated, and
baked when needed.
