Savory Chicken with Pine Nuts
This is a tasty stir fry recipe for two.
Prep Time: 15 to 20 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Ingredients:
- 1/2 pound boneless chicken breast, diced
- 1/2 cup pine nuts
- 1/2 cup bamboo shoots, blanched in boiling water for 30 seconds
- 2 tablespoons garlic, minced
- 2 tablespoons green onions, finely chopped
- 4 tablespoons olive oil
Chicken Marinade
Ingredients:
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon dry white wine or dry sherry
- 2 teaspoons soy sauce
Sauce
Ingredients:
- 1 tablespoon soy sauce
- 1 tablespoon water
- 2 teaspoons hoisin sauce
- 1 teaspoon oyster sauce
- 1 teaspoon chili bean sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
Instructions:
Dice chicken, place in a bowl and mix with marinade ingredients. Set aside.
Dice the bamboo shoots when cool enough to handle. Mix all the sauce ingredients
in a small bowl. Heat wok, add 2 tablespoons vegetable oil an
stir fry pine nuts until golden brown. Set aside on paper towel.
Using the same wok, heat again and add 2 tablespoons vegetable
oil. On high heat, add garlic and stir-fry 10 seconds, then add
chicken with marinade and stir-fry until chicken is white, but not completely
cooked through. Add sauce and bamboo shoots and cook for 2 minutes.
Add pine nuts and green onions, mix well and serve with hot cooked rice.
Serves 2.
